Turkish Meatloaf with Spice Yoghurt

Ingredients
 

Turkish Meatloaf

  • 500 grams lamb mince
  • 1 onion - finely diced (or minced)
  • 3 garlic cloves - minced
  • 2 tbsp tomato paste
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • ¼-½ tsp cayenne
  • 2 tbsp parsley - finely chopped

Spiced Yoghurt

  • 200 grams greek yoghurt
  • 1 tbsp lemon juice
  • ½ tsp cumin
  • ½ tsp garlic powder

Salad

  • 1 cucumber -Sliced lengthways, deseeded and finely diced
  • 2 tomatoes - Cut into quarters, deseeds and finely diced
  • 2 tbsp pomegranate arils - Fresh or frozen
  • 2 tbsp mint - roughly chopped
  • 2 tbsp parsley - roughly chopped
  • 1 tbsp lemon juice
  • 4 pita breads

Instructions
 

  • Preheat oven to 180C

Meatloaf

  • In a large bowl, place the mince, onion, garlic cloves, tomato paste, cumin, smoked paprika, cayenne, parsley and season with salt and pepper. Mix well to combine. Transfer to a 25sm round oven proof dish and spread out evenly. Place in oven and cook for 18 minutes.

Salad

  • Mix the cucumber, tomatoes, mint, parsley and lemon juice. Season with salt and pepper. Top with pomegranate.

Spiced Yoghurt

  • In a small bowl, mix yoghurt, lemon juice, cumin and garlic powder. Season with salt.

To Serve

  • Once the meatloaf is cooked, remove from the oven and transfer to a plate. Pour the juices over the top and season with salt.
  • Warm up the pitas and divide the meatloaf, salad and spiced yoghurt among plates.
