Ingredients
Turkish Meatloaf
- 500 grams lamb mince
- 1 onion - finely diced (or minced)
- 3 garlic cloves - minced
- 2 tbsp tomato paste
- 2 tsp cumin
- 1 tsp smoked paprika
- ¼-½ tsp cayenne
- 2 tbsp parsley - finely chopped
Spiced Yoghurt
- 200 grams greek yoghurt
- 1 tbsp lemon juice
- ½ tsp cumin
- ½ tsp garlic powder
Salad
- 1 cucumber -Sliced lengthways, deseeded and finely diced
- 2 tomatoes - Cut into quarters, deseeds and finely diced
- 2 tbsp pomegranate arils - Fresh or frozen
- 2 tbsp mint - roughly chopped
- 2 tbsp parsley - roughly chopped
- 1 tbsp lemon juice
- 4 pita breads
Instructions
- Preheat oven to 180C
Meatloaf
- In a large bowl, place the mince, onion, garlic cloves, tomato paste, cumin, smoked paprika, cayenne, parsley and season with salt and pepper. Mix well to combine. Transfer to a 25sm round oven proof dish and spread out evenly. Place in oven and cook for 18 minutes.
Salad
- Mix the cucumber, tomatoes, mint, parsley and lemon juice. Season with salt and pepper. Top with pomegranate.
Spiced Yoghurt
- In a small bowl, mix yoghurt, lemon juice, cumin and garlic powder. Season with salt.
To Serve
- Once the meatloaf is cooked, remove from the oven and transfer to a plate. Pour the juices over the top and season with salt.
- Warm up the pitas and divide the meatloaf, salad and spiced yoghurt among plates.
