Butter Chicken Pizza

  • 2 pizza bases - we used toscana
  • 1 cup mozzarella - grated
  • 300 grams chicken breast - diced
  • 1 jar butter chicken sauce
  • 120 grams baby spinach
  • 1 red onion - finely sliced
  • 2 tomatoes - deseeded and diced
  • 1 cucumber - deseeded and diced
  • 1 lemon
  • 1 tsp cumin powder
  • ¼ cup coriander leaves - finely chopped
  • 1 red chilli optional, to serve


  • Preheat oven to 200C
  • In a saucepan on medium heat, combine the chicken and butter chicken sauce and cook for 10 minutes.
  • Meanwhile, make the salsa. In a medium sized bowl, combine the tomatoes, cucumber, lemon juice, coriander and season with salt and pepper.
  • To make the pizza. Spread the base with some of the butter chicken sauce (sauce only). Top with spinach, red onion and butter chicken. Cover with mozzarella.
  • Pop in oven for 10 minutes. Remove and top with salsa. Enjoy!

Tips and Variations

GLUTEN FREE - Toscana have GF bases also
VEGETARIAN - Replace chicken with tofu
Use any ready made butter chicken sauce you like.
