Ingredients
 

  • 2 lamb shanks
  • ¾ cup pearl barley
  • 1 litre beef stock
  • 1 400g tinned tomatoes
  • 2 parsnip - chopped
  • 2 carrots - chopped
  • 3 celery sticks - chopped
  • 1 onion - finely chopped
  • 4 garlic cloves - crushed
  • 1 bay leaf
  • 3 rosemary - sprigs (about 6cm length)
  • 3 thyme - sprigs (about 6cm length)
  • salt and pepper

Tips and Variations

Vegetarian -  Use vegetable stock instead of beef and remove the shanks. 
Gluten Free -  Replace the pearl barley with Faro, Buckwheat or Quinoa.
