Warm Lamb Salad

Just cause she ain’t pretty doesn’t mean she doesn’t have the goods. Who can go past a classic combination of lamb, mint, feta? Throw in a side of warm asparagus, zuchinni and rocket salad and your set.

Servings 2 people


  • 300 g minced lamb
  • 60 g feta cheese
  • 1 garlic cloves – crushed
  • 1 tbsp breadcrumbs
  • 1 tbsp mint – finely chopped
  • 1/2 tsp cumin
  • 1/2 bunch asparagus – sliced diagonally
  • 1 zucchini – thickly sliced
  • 1 cup rocket
  • 1 tbsp sesame seeds – toasted
  • 1 lemon


  • Combine mince, 40g feta, garlic, breadcrumbs, cumin and mint in a bowl. Season with salt and pepper. Roll mixture into 8 patties. 
  • Cook asparagus in boiling salted water for 30seconds. Drain and refresh in iced water. Transfer to a large bowl.
  • Heat 1 tbs oil in a frying pan over medium heat. Add zuchinni and cook, stirring for 4 minutes or until golden and still crisp. Add to bowl.
  • Put another tablespoon olive oil into the frying pan and cook patties, 2-3 minutes each side our until browed and cooked through. 
  • Add patties, rocket, and lemon juice to vegetables and toss to combine. 
  • Divide among plates, top with extra mint leaves, lemon zest,  toasted sesame seeds and the remaining feta. 

Tips and Variations

Make your patties on meal prep day and have this number on the table in 15 minutes.
Swap the lamb for ½ cup cooked quinoa, ½ cup mashed lentils and 1 egg.
