Ingredients
- 500 grams beef mince
- 1 onion – roughly chopped
- 1 carrot – roughly chopped
- 1 red capsicum – roughly chopped
- 6 garlic cloves
- ΒΌ cup olive oil
- 1 700gram passata
- 3 400gram tinned tomatoes
- 2 tsp salt
- 2 tsp sugar
- 1 bunch basil
- parmesan
Instructions
- Blitz onion, carrot, capsicum and garlic in a food processor.
- Heat oil in a large pan on medium heat. Add the mixture to the pan and cook for 5 minutes. Add mince, breaking up with a fork or whisk, and brown all over.
- Transfer to the slow cooker, Add passata, tomatoes, salt, sugar and pepper. Cook on low for 8 hours (or high for 4).
- Stir through basil, toss though pasta and cover with parmesan.
Tips and Variations
Serve with garden salad or steamed vegetables and crusty bread to mop up the sauce.
Vegetarian – Omit mince, this is a beautiful rich tomato sugo without the mince.
