Quick Spiced Beef

Ingredients
 

  • 500 grams beef mince
  • 1 eggplant – cut into 1cm dice
  • 2 red capsicum – cut into 1cm dice
  • 2 tbsp olive oil
  • 1 red onion – diced
  • 3 garlic cloves – crushed
  • 1 tsp ginger – grated
  • 1 tbsp ground cumin
  • 1 tsp ground cinnamon
  • 200 ml beef stock
  • 1 tbsp conflour -mixed with water to form a smooth paste
  • ΒΌ cup raisons
  • 2 tbsp slivered almonds -toasted
  • 2 tbsp mint
  • 2 tbsp coriander
  • 1 cup rice

Instructions
 

  • Cook rice as per instructions or your favourite method.
  • Heat a tablespoon olive oil in a large fry pan over medium-high heat. Add onion, eggplant and capsicum. Cook for 5 minutes, until onion softened and eggplant is browned. Remove from pan and transfer to a plate.
  • Add another tablespoon olive oil to the same pan. Pop in the garlic, ginger, spices and mince. Cook for 5 minutes or until browned all over. Transfer to another plate.
  • In the same pan, add the stock and raisons and heat through. Stir in the cornflour mixture to thicken. Add back the mince and eggplant mixture and stir through. Season with salt and pepper.
  • Serve with rice, topped with slivered almonds, and herbs.

Tips and Variations

Vegetarian –Β  Replace the mince with 2 tins of brown lentils.Β 
Gluten-Free –Β  Yes
Low Carb – Replace the rice with cauliflower rice or serve the spiced mince on its own.Β
