Leftover Pulled Pork Nachos

Friday night fast food is taken care of this week with the leftover pulled pork. Load it up with lots of veggies and toppings galore.

Ingredients
- 175 g corn chips
- 1 tinned black beans – drained and rinsed
- 1 red capsicum – diced
- 1 corn cob – husk removed and corn sliced from cob
- 2 tomatoes – diced
- ½ red onion – finely diced
- 1 cup cheese – grated
- 1 avocado – mashed
- 1 lime – juiced
- sour cream
- jalapeno
- coriander
Instructions
- Preheat oven to 180C
- On a large baking tray, spread out the corn chips. Cover with pulled pork, black beans, capsicum, corn, tomatoes, red onion and grated cheese.
- Pop in the oven for 10-12 minutes.
- Combine avocado, lime juice and season with salt and pepper.
- Remove nachos from oven, top with avocado, sour cream, jalapenos and coriander.
Tips and Variations
Tinned corn can be used instead of fresh.
