Leftover Pulled Pork Nachos

Friday night fast food is taken care of this week with the leftover pulled pork. Load it up with lots of veggies and toppings galore.
Servings 4

Ingredients
 

  • 175 g corn chips
  • 1 tinned black beans – drained and rinsed
  • 1 red capsicum – diced
  • 1 corn cob – husk removed and corn sliced from cob
  • 2 tomatoes – diced
  • ½ red onion – finely diced
  • 1 cup cheese – grated
  • 1 avocado – mashed
  • 1 lime – juiced
  • sour cream
  • jalapeno
  • coriander

Instructions
 

  • Preheat oven to 180C
  • On a large baking tray, spread out the corn chips. Cover with pulled pork, black beans, capsicum, corn, tomatoes, red onion and grated cheese.
  • Pop in the oven for 10-12 minutes.
  • Combine avocado, lime juice and season with salt and pepper.
  • Remove nachos from oven, top with avocado, sour cream, jalapenos and coriander.

Tips and Variations

Tinned corn can be used instead of fresh.
