Middle Eastern Chicken Traybake

Ingredients
 

  • 3 preserved lemon quarters - flesh removed and finely diced
  • 1 tbsp cumin seeds
  • 4 tbsp olive oil
  • 2 tbsp harissa
  • 1 tbsp ground coriander
  • 1 tbsp cinnamon
  • 4 garlic cloves - crushed
  • 2 tsp dried mint
  • 1 red onion - thickly sliced
  • 1 cauliflower - cut into large florets
  • 1 eggplant - cut into large 5 cm pieces
  • 8 chicken drumsticks

To Serve

  • 2 tbsp mint - roughly chopped
  • 2 tbsp coriander - roughly chopped
  • 2 tbsp slivered almonds
  • ¼ cup pomegranate arils - we used frozen ones defrosted.

Instructions
 

PREP

  • In a largebowl mix together the 3 tbsp olive oil, coriander, cinnamon, garlic, mint and preserved lemons. To prepare the lemons, remove the flesh and finely dice. Add the chicken, toss to combine and leave to marinate overnight.

MAKE

  • Preheat oven to 180C
  • Place the cauliflower, eggplant and onion on a large baking tray. Sprinkle over cumin seeds and season with salt and pepper. Remove chicken from marinade. Pour marinade over vegetables and toss to combine. Top with chicken and a drizzle of olive oil. Pop in the oven to bake for 40 minutes, or until the chicken is cooked through. In the last 5 minutes, scatter the almonds over the mix to toast.
  • Remove from oven, scatter pomegranate, mint and coriander over the top and add a squeeze of lemon.

Tips and Variations

VEGETARIAN - Replace chicken with 2 tins of drained chickpeas. Cut the cauliflower and eggplant into smaller pieces (2-3 cms) and bake for half hour. 
GLUTEN FREE 
PREP AHEAD - 
Nutritional info based on skin on drumsticks. You could also use skinless drumsticks or thighs. 
Also super delicious with some garlicky yogurt sauce. Simply roast a whole garlic bulb in the oven with the traybake and then squeeze a couple of cloves into some yoghurt and season with salt and pepper. 
Leftovers are great in a wrap with this garlicky sauce.
