Jerk Chicken Traybake

Ingredients
- 1 ripe pineapple -peeled, cut into large pieces
- 4 sweet potatoes , cut into random size pieces
- 1 large red capsicum - roughly diced
- 1 `red onion - diced
- 3 tbsp olive oil
- 8 chicken drumsticks
- 1tsp smoked paprika
- 1 tsp allspice
- 1 tsp cinnamon
- 1 tsp dried chilli flakes - to taste (½-1tsp
- 1 tsp nutmeg
- 1 tsp cocoa powder
- 2 tbsp 2 tbsp white vinegar
- 2 tbsp soy sauce
- 1 orange - zest and juice
- 2 lime
- 1 avocado
- coriander
- ½ cup natural yoghurt
Instructions
- Preheat an oven to 220C
- In a baking tray, combine the sweet potato, pineapple, capsicum, red onion chicken, spices, olive oil and season well. Toss to coat.
- Add the vinegar, soy, orange zest and juice and toss well.
- Roast for 40 minutes, until everything is smelling amazing, the chicken is very tender and the sweet potato is cook
- Meanwhile, combine the avocado, juice 1 lime, half the coriander and seasion with salt. In another small bowl combine the yoghurt, a pinch of paprika , lime and remaining coriander, season to taste.
- Serve the tray bake with the yoghurt and avocado spooned over and the shallots, coriander scattered. Extra lime is fantastic.
Tips and Variations
VEGETERIAN - Replace chicken with extra firm tofu cut into large chunks. Reduce cooking time to 30 minutes.
GLUTEN FREE
LOW CARB - Replace the sweet potato with extra capsicum, and add zucchini.
