Jerk Chicken Traybake

Ingredients
 

  • 1 ripe pineapple -peeled, cut into large pieces
  • 4 sweet potatoes , cut into random size pieces
  • 1 large red capsicum - roughly diced
  • 1 `red onion - diced
  • 3 tbsp olive oil
  • 8 chicken drumsticks
  • 1tsp smoked paprika
  • 1 tsp allspice
  • 1 tsp cinnamon
  • 1 tsp dried chilli flakes - to taste (½-1tsp
  • 1 tsp nutmeg
  • 1 tsp cocoa powder
  • 2 tbsp 2 tbsp white vinegar
  • 2 tbsp soy sauce
  • 1 orange - zest and juice
  • 2 lime
  • 1 avocado
  • coriander
  • ½ cup natural yoghurt

Instructions
 

  • Preheat an oven to 220C
  • In a baking tray, combine the sweet potato, pineapple, capsicum, red onion chicken, spices, olive oil and season well. Toss to coat.
  • Add the vinegar, soy, orange zest and juice and toss well.
  • Roast for 40 minutes, until everything is smelling amazing, the chicken is very tender and the sweet potato is cook
  • Meanwhile, combine the avocado, juice 1 lime, half the coriander and seasion with salt. In another small bowl combine the yoghurt, a pinch of paprika , lime and remaining coriander, season to taste.
  • Serve the tray bake with the yoghurt and avocado spooned over and the shallots, coriander scattered. Extra lime is fantastic.

Tips and Variations

VEGETERIAN -  Replace chicken with extra firm tofu cut into large chunks. Reduce cooking time to 30 minutes. 
GLUTEN FREE 
LOW CARB - Replace the sweet potato with extra capsicum, and add zucchini.
