Hot Smoked Salmon Salad

Ingredients
 

  • 1 head garlic
  • 1 cup natural yoghurt
  • 2 tbsp milk
  • pinch white pepper
  • 300 grams hot smoked salmon
  • ½ red onion
  • 1 cucumber -halved lengthways, thinly sliced
  • ½ bunch radishes - thinly sliced
  • 1 granny smith apple - thinly sliced
  • 200 grams rocket

Instructions
 

  • Preheat oven to 200C. Place the garlic on a baking tray and cook for 20 minutes
  • Squeeze the garlic flesh into a bowl and mash with a fork. Add the yoghurt and milk and combine. Season with white pepper and salt.
  • On a serving platter (or individual plates), place the rocket, onion, cucumber, apple and radish. Flake the salmon evenly over the top of the salad.
  • Drizzle over the yoghurt dressing, add a squeeze of lemon and season.

Tips and Variations

GLUTEN FREE
VEGETARIAN - Add some par boiled carrots to the salad
