Herb and Garlic Chicken with Roasted Veg

Super garlicky chicken with tasty roasted broccoli, brussel sprouts and sweet potato covered in lemon, garlic, chilli and parmesan.

Ingredients
 

Herb and Garlic Chicken

  • 500 g chicken – thigh or breast
  • 4 garlic cloves – finely diced
  • 2 tbsp basil – roughly chopped
  • 2 tbsp parsley – roughly chopped
  • 2 tbsp oregano – roughly chopped
  • 2 tbsp olive oil

Roasted Veg

  • 1 medium broccoli – sliced into 'steaks'
  • 4 small sweet potato – sliced into .5cm rounds
  • 8 large brussel sprouts – sliced into 4 rounds
  • 1 lemon
  • 1 garlic cloves – crushed
  • ½ tsp chilli flakes
  • 3 tbsp flaked almonds
  • 2 tbsp olive oil

Instructions
 

  • To make the most delicious chicken, marinate for at lease 1 day. In a container add all the ingredients and season with salt and pepper.
  • Preheat the oven to 230C
  • In a bowl, add the garlic, olive oil, chilli and zest from lemon. Toss the vegetables to coat. I toss each vegetable separately. Spread the vegetables on a baking tray (you may need several baking trays depending on the serving size) and season with salt. Pop in the oven for 10 minutes.
  • Remove from the oven, turn over and sprinkle almonds over. Pop back into the oven for 8 minutes.
  • For the chicken. Heat a pan over medium high heat and cook for 4-5 minutes each side. Be sure to scrape all of the garlic, oil and herbs from the pan. Set aside to rest and pour pan juices over.
  • Remove the veg from the oven. Squeeze over the lemon juice and parmesan and toss to combine.

Tips and Variations

An alternative way to cook the chicken is to pop it in the oven at the same time as the vegetables and remove when they are done. The high temp cooks the meat quicker whist retaining the juices. Make sure if you are using breast to use large ones for this so they don’t dry out. I prefer to cook mine in a fry pan as it makes the garlic and herbs beautiful and caramelised. 
Vegetarian –  Make the sweet potato like the chicken and fry off in the garlic and herbs. Add extra vegetables to the roast. 
Gluten Free – 
Low Carb –  Replace the sweet potato with extra vegetables.
