Crispy Spiced Lamb, Hummas and Orange and Beet Salad

Ingredients
 

Crispy Lamb

  • 4 pita wraps
  • 400 g lamb mince
  • 1 onion – finely chopped
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • 1 tsp salt
  • ½ tsp black pepper

Hummus

  • 1 400g tinned chick peas – drained
  • 1 lemon – juiced
  • 2 tbsp tahini
  • 1 garlic cloves
  • ¼ c water

Orange and Beet Salad

  • 200 g mixed leaf lettuce mix
  • 4 small beetroot – peeled and sliced thinly
  • 2 oranges – peeled and sliced
  • 2 tbsp mint – finley chopped
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp honey

Instructions
 

  • Preheat oven to 220C.
  • Place sliced beetroot on oven tray, sprinkle with salt and roast for 15 minutes.
  • Hummus – Place all ingredients in blender and blend until smooth. Season to taste with salt.
  • Lamb – Heat oil in pan over medium heat. Add onion and cook for 3-4 minutes or until translucent. Add spices and stir to combine. Turn heat up to medium high and add lamb, breaking up with a wooden spoon. Cook for 5 minutes or until crispy, stir and cook for a further 5 minutes.
  • Salad – Put the olive oil, red wine vinegar and honey in a jar and shake to combine. Add to a bowl with the lettuce mix, mint, orange and beetroot. Season and toss to combine.
  • Serve as wraps – Spread pita with hummus, add crispy lamb and fill up with salad and wrap it up OR
    Cut the pita into triangles, place in oven for the last 5 minutes with the beetroot to crisp up.
    On a large plate, spread the hummus and place the crispy lamb in the middle. Serve on pita chips with salad on the side.

Tips and Variations

Hummus is really simple to make, BUT it is completely ok to buy a tub if that makes your dinner stress free – just remember to delete the items from the shopping list.
