Crispy Chicken Drumsticks and Chips

Ingredients
 

  • 8 chicken drumsticks
  • ½ buttermilk
  • 1 tbsp dijon mustard
  • ½ cup flour
  • 1 tsp baking powder
  • 2 tbsp sesame seeds
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 4 large potatoes - cut into 1 cm chips
  • ¼ red cabbage - finely sliced
  • 4 carrots - finely sliced
  • 1 spring onion - finely sliced
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice

Instructions
 

  • .Prepare the chicken by whisking the buttermilk with the mustard in a large glass bowl until well blended. Add the chicken and turn to coat, then cover and marinate in the fridge for 30 minutes or leave to marinate overnight.Place into the oven and bake until golden brown and no longer pink in the centre, about 45 minutes, turning halfway through cooking.
  • Preheat the oven to 200°C. Place a cooling rack on one baking tray (for the chicken) and line another with baking paper.
  • Put the flour, baking powder, sesame seeds, paprika, salt and pepper into a medium-sized zip-lock bag. Shake 1 or 2 pieces of the marinated chicken at a time in the bag until coated. Shake off any excess flour and place the chicken on the prepared baking tray.
  • Spray the chicken pieces lightly on both sides with olive oil. Place into the oven and bake until golden brown and no longer pink in the centre, about 45 minutes, turning halfway through cooking.
  • Toss the potatoes in 1 tbsp olive oil and season with salt. Spread out on baking tray and pop in the oven at the same time as the chicken.
  • While the chicken and chips are cooking. Pop the cabbage, carrot and spring onion in a medium sized bowl. Add mayo and lemon juice and season with salt and pepper. Toss to combine.
  • ** If you have an air fryer, pop the chicken in there at 200C for 40-445 mins and use the oven for the chips **

Tips and Variations

VEGETARIAN -  Use 150 grams of firm tofu per person. Cut into large rectangles coat the same and cook for 30 minutes. 
LOW CARB - Try swede or carrot fries.
GLUTEN FREE - Use GF flour
