Chocolate Pear Pudding

Ingredients
- 75 grams plain flour
- 50 grams almond meal
- 40 grams cocoa powder
- 100 grams light brown sugar
- 1 tsp baking powder
- ΒΌ tsp salt
- 150 grams butter - melted and slightly cooled
- 2 eggs
- 300 mls milk
- 6 pears - ripe or 400 grams canned pears
Instructions
- Grease a 22cm square baking tin and heat the oven to 200C (180C fan)/
- If using fresh pears, peel, quarter and slice into 1cm thickness. If using canned, slice into thirds.
- Put the flour, almonds, cocoa powder, sugar and salt in a mixing bowl and whisk to combine.
- Beat the eggs and milk into the melted butter, then stir this into the dry ingredients.
- Spoon into the prepared tin and arrange the pear slices on top, sprinkle with a little extra brown sugar then transfer to the oven and bake for 30 minutes.
- Serve with a dollop of cream or icecream.
