Chicken Tostadas with Avocado Crema

Ingredients
 

  • 4 corn tortillas
  • 1 440 gram refried beans
  • 400 grams chicken breast
  • lettuce - shredded
  • 2 tomatoes - finely diced
  • ½ red onion - finely diced
  • 100 grams danish feta

Avocado Crema

  • 1 avocado
  • ¼ cup sour cream - or greek yoghurt
  • 1 lime - juiced
  • 1 cup coriander - leaves and stems (not the root)
  • 1 jalepeno - deseeded (or keep them in if you like the heat)

Instructions
 

Prep Ahead

  • PERFECTLY POACHED CHICKEN
    Bring a saucepan of water to the boil on the stove. Place the chicken gently into the water. Pop a lid on and take it off the heat. Leave to poach for 30 minutes
    NOTE - the chicken breast need to be small (less than 200 grams each). Cut your breasts smaller if they are larger.
    Remove the chicken and set aside to cool. Shred.

Make

  • Preheat the oven to 200C.
    Place the corn tortillas on a large oven tray. Spray each side with a little olive oil. Pop in the oven for 5 minutes, flip over and cook for a further 5 minutes until the tortillas are crispy like a large corn chip.
  • While the tortillas are turning into tostadas, prepare all the salad ingredients, the Avocado Crema and warm the refried beans and chicken.
  • To make the Avocado Crema, combine the avocado, sour cream (or yogurt), lime juice, coriander and jalapeño (if using) in a blender and blitz until well combined. Add a little water, a bit at a time, until the desired consistency is achieved.

To Serve

  • Assemble the tostadas by spreading a thin layer of refried beans on each tostada shell. Then top with shredded chicken, shredded lettuce, diced tomatoes and onions, crumbled feta and a good drizzle of avocado crema.
    Serve each tostada with a lime wedge, a sprinkle of sea salt, and your favorite hot sauce.

Tips and Variations

GLUTEN FREE
VEGETARIAN: replace chicken with a tin of black beans, or try jackfruit. 
SHORTCUTS: instead of poaching chicken, use a rotisserie chicken.
