Cauliflower Shawarma Wraps with Pomegranate and Herbed Yoghurt

Ingredients
 

Spiced Cauliflower

  • 1 cauliflower - cut into small florets
  • 3 tbsp olive oil
  • 1 lemon - juiced
  • 1 garlic cloves
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • ½ tsp cinnamon
  • ¼ tsp allspice
  • ¼-½ tsp chilli flakes

Herbed Yoghurt

  • 150 grams greek yoghurt
  • 3 tbs dill
  • 3 tbsp mint

To Serve

  • 4 wraps
  • 1 red onion - thinly sliced
  • 1 pomegranate - seeded
  • 40 grams pistachios - or hazelnuts, almonds - roughly chopped

Instructions
 

  • Preheat oven to 190C
  • On a large oven tray, combine the cauliflower, olive oil, lemon juice and spices. Season with salt. Place in oven and cook for 30 minutes.
  • In a small bowl, combine the yoghurt, half the dill and mint, season with black pepper.
  • Warm the wraps in the oven so they hare heated through but still soft.
  • Divide the cauliflower between the wraps then scatter over the onion and drizzle with the herb yogurt. Finish with the rest of the herbs, the pistachios and the pomegranate.
