BBQ Tofu Burgers with Slaw

  • 400 grams Tofu - sliced into 1cm high 'burgers'
  • 3 tbsp bbq sauce
  • 4 burger buns
  • ¼ cabbage - shredded
  • 2 carrot - shredded
  • 1 apple - shredded
  • ¼ cup coriander - roughly chopped
  • 3 tbsp mayonnaise
  • 2 tsp apple cider vinegar
  • 1 avocado - sliced


  • Slice the tofu, then remove any excess water by wrapping in paper towel and placing between 2 plates for 5 minutes.
  • Shred the cabbage, carrot and apple and place in a large bowl. Add coriander, mayonnaise, apple cider vinegar and season with salt. Mix well and set aside.
  • Pop the buns in the oven on 140C to warm through
  • Season the tofu with salt and pepper. Heat a tablespoon of oil in a large frypan on high heat. Add tofu and cook for a couple of minutes each side until browned and crisp.
  • Turn heat down on stove to low. Add bbq sauce and coat the tofu well. Cook for a minute until caramelised.
  • Assemble the burgers - Place tofu and any extra sauce on the bottom of the bun, add avocado and top with slaw.
